This is such a nice alternative to bog standard porridge during the winter months. It’s sweet, filling and warm, packed with antioxidants from the blueberries and protein from the greek yoghurt and egg. This is a great dish for only 357 calories per serving, that will keep you sustained right through until lunch. I love almond and blueberry together and this would be lovely with some chopped almonds throughout or scattered on top too, for some extra texture.

Ingredients

Serves 1 | 357 calories per serving

  • 40g oats

  • 100g 0% Greek Yoghurt

  • 1 egg

  • handful frozen blueberries

  • 1 tsp almond extract / essence

  • 2 tsp maple syrup

Method

  1. Preheat oven to 190 degrees celcius.

  2. Mix all ingredients (except for 1 tsp maple syrup) into a bowl and place in an oven proof dish. Add a few extra blueberries on top.

  3. Bake for 30-35mins until golden.

  4. Drizzle second tsp maple syrup on top and eat warm!
