Chicken Taco Soup
Another rotisserie chicken dinner, this one is really filling and satiating from all the legumes and protein. It’s a one pot lunch that will keep you full and warm on the coldest winters day. You can top this soup with anything you like, personally I like shredded cheese, squeeze of lime, dollop of sour cream and a few tortillas for scooping up all the soup.
Brussel Sprout Salad with Pancetta
Don’t click out of this recipe just because the word “Brussels Sprout” is in it. This is a recipe that a restaurant I used to work in, in Toronto, had on their menu, the “cavoletti salad”. Before I left, I asked one of the chefs how to make it and they told me the recipe. You would honestly not realise that you are eating raw sprouts. Please give this recipe a go, even if you hate sprouts, as I guarantee you will likely enjoy this. Shredding makes them lose the ‘sprout” texture and this is even better served with a grilled chicken breast on top or some steak.
Halloumi & Chickpea Stew
As if I needed an excuse to eat cheese for dinner! This dish is a great autumnal veggie meal that has so many vegetables packed in a rich tomato sauce you will have to go back for more. The harissa adds a lovely smoky flavour and it really compliments the saltiness of the halloumi.
Tomato & Basil Soup
I am a bit of a soup fanatic. Soup is a great way for me to make sure I’m eating enough vegetables. This soup has so much goodness packed in and it’s really easy to make (and eat!). Tomato and basil is one of my favourite flavours of soup and it’s lovely with some focaccia bread or a sandwich.
Roast Pepper & Tomato Soup
This is Autumn in a bowl. So hearty, nutritious and tasty. This is a family favourite in our house, we eat it all year round (since Ireland is basically winter 300 days a year!!). The herbs & chilli give this soup lovely warmth and depth of flavour. The roasting of the vegetable is also key to this soup. Served with a crusty roll, you will not be disappointed.
Spanish Omelette
The first instalment of my Spanish inspired recipes. This is a classic vegetarian lunchtime dish that I just love. It’s hearty, filling and healthy. I added some extra greens in, to try and combat all of the tapas and €3 wine I’ve been drinking!!! Traditionally, this dish is simply eggs, potatoes, onion & herbs. It’s super easy to make and really tasty.
Shrimp Po Boy
Calling all sandwich & seafood lovers! This sandwich with tangy remoulade feels like you are eating a greasy sandwich but with no deep frying involved. You get the taste experience without the heavy feeling after eating fried food. Since the prawns are battered and seasoned this recipe is also great for people who claim to not like seafood, as it’s not overly fishy. Let me know if you try it!
Halloumi Salad
This is one of my all time favourite salads. I’m not a big salad lover to be honest, but the quinoa / wild rice & salty halloumi make this dish a substantial meal in itself. It’s perfect for feeding meat eaters and veggie friends alike.
