Caramel Squares
These just might be perfection; chewy, chocolatey & more-ish.I love adding cocoa to the biscuit/cake layer at the bottom for that extra hit of chocolate. These are not for the faint hearted, a little portion goes a long way. I cut mine into 16 slices initially and ended up cutting them in half again. These will keep in an airtight container for about 3-4 days (if they even last that long!)
Raspberry White Chocolate & Coconut Muffins
These are so tasty and delicious. Nicely tarte from the raspberries with a lovely sweetness from the white chocolate & vanilla. The coconut adds a lovely nutty depth to it. These are HUGE so they are sure to satisfy any sweet cravings. I find it best to mix these by hand as if using a mixer you can easily over-mix the batter and the muffins will be a bit flat.
Spiced Apple & Blueberry Cake
This is a really nice cake for an afternoon snack with a cuppa. Not overly sweet and nicely spiced from the mixed spice & cinnamon. This cake is relatively low in fat & sugar, so you won’t be left with a stodgy ‘just ate too much cake’ feeling (unless you eat the whole thing, lol). It’s such a handy cake to have up your sleeve if you are trying to make healthier choices, but still want that cake! If you wanted to make this vegan, simply sub out regular milk and sub in your favourite plant based alternative
Hot Cross Buns
An Easter classic. I love these nicely spiced cakes, toasted with some butter & jam. I know some people hate raisins but you can absolutely sub in chocolate chips or orange zest / mixed peel instead. These are really light and fluffy inside. A lovely breakfast and even better as a bread & butter pudding base! (Stay tuned recipe of that to follow)!!
Fruit Scones
You can’t beat a classic scone with butter, jam and a cup of tea. This recipe is really simple and the only trick is not to handle the dough too much or the mixture won’t rise in the oven. I know loads of people don’t like raisins so feel free to substitute these for chocolate chips or even leave them out completely and have them plain. These are best served warmed and freshly eaten within 2 days of cooking (if they last that long!).
Chocolate Chip Muffins
I used to love ordering the chocolate muffins from Tim Hortons on a Friday when I lived in Toronto. Only difference was those muffins were literally like 410 calories. These are roughly 255 and leave you satisfied that you’ve had a nice chocolatey treat, without completely blowing your calories for the day. They are sweet, light and fluffy. Who says you can’t eat treats when trying to live a healthy lifestyle? I am a firm believer of everything in moderation and I can safely say that I eat some form of biscuit or chocolate every single day. Life’s way too short to not eat the chocolate.
Mini Egg Cookie Cups
The start of my Easter recipes. These are chunkier than a cookie and the mini eggs sit in the centre of the cookie like a ‘nest’. I love cadbury mini eggs, they are one of my favourite chocolates. I find myself buying bags of them for “baking purposes” and eating them all myself. These are super cute and easy to make. You don’t need to freeze the dough or anything either. They would be a great one to make with kids also. You could also incorporate all the chocolate into the dough and make regular cookies out of this dough also.
Apple Crumble Bars with Salted Caramel
My raspberry crumble bars are one of my most loved recipes on here and one of my favourite desserts to eat is apple crumble, so I thought I would combine the 2. While I do love chocolate, if there is apple crumble on a menu, I always opt for it. I think it’s the cinnamon and spices that make me weak!
These are very easy to prepare as your base for the bars is the same as the topping. These are a great snack on the go or as a lunchbox filler. The salted caramel is optional but it is a fabulous addition and really brings these bars to the next level.
White Chocolate & Raspberry Brownies
These are my go-to brownie recipe. I’ve been making them for years. I have adapted the original recipe in Rachel Allens “food for living” book. The combination of the tart berries with the sweet white chocolate is just a match made in heaven. I made these for Valentines day and used a heart shaped cutter, but obviously these can just be cut into regular squares also. Allow to cool completely before slicing (but while the white chocolate is not fully hard). I hope you enjoy!
Chocolate Orange Cookies
Most people either love chocolate & orange flavour combo or loathe it, I personally love it and can’t get enough of it. These cookies are a gorgeous treat to have with a cup of tea that won’t ruin your healthy eating plans compared to NYC style cookies that are twice the size.
Cinnamon Rolls
Cinnamon rolls are the ultimate comfort food. These are really soft, moist and decadent. Cinnamon rolls are one of my all time favourite treats. When I lived in Toronto I used to love going to Bunners in Kensington market for my Cinnamon roll fix. I can’t honestly describe how good these are. They are 100% worth the effort of making your own dough (and I rarely say that as I hate making pastry!!). Enjoy with a cup of tea and your favourite Netflix series.
Nutella Stuffed Cookies
These need little to no introduction. Look at that Nutella filled centre. This is a chocolate lovers dream. I love using dark chocolate as my chocolate chips as I find the Nutella centre with milk or white chocolate too sweet for my personal preference.
Peanut Butter Brownies
So I’ve come up with a vegan friendly dairy free brownie that you wouldn’t believe has no dairy in it. It’s fudgy, gooey & has a rich chocolate flavour that’s complemented by the peanut butter swirl. These are a great treat at under 300 calories per serving.
Nutty Flapjacks
I love an oaty buttery flapjack. These have a blend of coconut, almond and walnut with an optional drizzle of dark chocolate on top. These are just sheer perfection with a cup of tea.
Brookies
Cookies crossed with brownies, I’ve seen them called brookies on other blogs so I’m going to roll with that. These were a happy accident as I had originally intended to make triple chocolate NYC cookies, but due to the cocoa powder, the texture of these are denser and more brownie like. They really are decadent and luscious. If you are chocolate lover you will not be disappointed.
Tiramisu
Tiramisu is an Italian classic that we always make for special occasions in our house. Since we made some as part of our dessert this Christmas, I thought there would be no better time to share this recipe. I am usually not a coffee in dessert type of person, but I am a sucker for Tiramisu. The mascarpone is too good to resist. I never order Tiramisu when I am out as it just is never as good as my Mam’s. This is our family recipe, and I know I may be biased, but it is the nicest Tiramisu I have ever eaten. I hope you enjoy!
Mince Pies
Love them or hate them, mince pies are an essential household item over the Christmas holidays. I personally love them. I have made 2 different varieties, the coconut crumble and the simple shortcrust pastry variety. I made my own mincemeat, and I really do think it was worth the little extra effort.
NYC Cookies
These are my all time favourite cookies. I love chunky, soft cookies with loads of chocolate chips as opposed to a crunchy biscuit type cookie and these are it. If you are a cookie lover and a chocoholic then these cookies will be right up your street. The quantities I’ve used here can be doubled. I always have a stash of these dough balls in the freezer and when I want a cookie or have people coming over, all I need to do is bake them in the oven and they will be fresh every time.
Gingernut Biscuits
Gingernut biscuits are a staple in our house. They are really nice and crunchy and go perfect with a cup of tea of coffee. I made big biscuits out of this amount of dough, but you could definitely make them smaller if you prefer a thinner biscuit. Ginger is definitely a festive flavour and I’m so happy to finally be starting to make my Christmas recipes of the season. I hope you enjoy
