Chocolate Chip Muffins
I used to love ordering the chocolate muffins from Tim Hortons on a Friday when I lived in Toronto. Only difference was those muffins were literally like 410 calories. These are roughly 255 and leave you satisfied that you’ve had a nice chocolatey treat, without completely blowing your calories for the day. They are sweet, light and fluffy. Who says you can’t eat treats when trying to live a healthy lifestyle? I am a firm believer of everything in moderation and I can safely say that I eat some form of biscuit or chocolate every single day. Life’s way too short to not eat the chocolate.
Ingredients
Makes 19 | Roughly 255 calories per muffin*
375g plain flour
3 tsp baking powder
80g butter (soft)
80ml vegetable oil
150g light brown sugar
2 eggs
250ml low fat milk
50ml 0% greek yoghurt
250g chocolate chips (I used Aldi Dairyfine chocolate chopped)
1 tsp vanilla essence / extract (optional)
Method
Preheat oven to 200 Celcius in a fan assisted oven.
Line a muffin tray with some paper/silicone re-useable liners
Cream butter with butter, oil & sugar
Add in eggs & mix
Add in milk, vanilla & yoghurt
Sift all your dry ingredients into a large bowl and add your chocolate chips.
Fold in dry ingredients to the wet mixture until just combined.
Fill each of the muffin casings 2/3 of the way to the top.
Bake at 200 for 5 minutes then reduce the temperature to 180 and bake for 20 mins.
