Bacon & Cheese Bread Bowl
This is the ultimate sharing plate for a cheese and wine night with friends. Everyone can dunk some bread in the sauce and the best part is when the croutons for dipping are used up, you can slice the bowl into chunks that are soaked in the lovely sauce. Literally nothing goes to waste with this meal. It’s creamy, salty and moreish. It looks very impressive, despite how easy it is to make.
Stuffed Lamb Pita
This is a twist on a traditional bbq dinner that can also be really easily cooked on the pan also. I love the char that BBQs give on the lamb, so if it’s summer and nice weather and you have a BBQ, I would recommend trying it out instead of burgers some evening. The bulgur salad is pretty similar to middle eastern tabbouleh, but just with less herbs. The lamb is nice and spicy but the salad and mint yoghurt dressing cools it down nicely. This is zesty, spicy and packed full of delicious middle eastern flavours. Just as handy as sticking some burgers or chicken skewers on the BBQ but something just a little bit different.
Crispy Shredded Chicken in Sweet Chilli Sauce
This was my go-to Chinese takeout order for years. I stopped ordering it as I found it left a really heavy feeling in my stomach and I would get really bloated, but I just love the flavour of this dish, which is why I kept going back for more. Sweet, salty & nicely spiced. I made this version way healthier by using the airfryer and this comes in at only 355 calories per portion (without rice or noodles) and no heavy bloated feeling, win-win. This is the ultimate fakeaway meal. I love this with either rice or noodles, some prawn toast & some spring rolls.
Chicken Gyoza
Gyozas are little savoury pastry pocket dumplings that are generally steamed or fried, served as a starter in Asian cuisine. If gyozas are on any menu, I find it hard to resist. I love them all veggie, chicken, prawn or port. I never thought it would be possible to make these without a bamboo steamer but my Wagamama cookbook came to the rescue and pulled through with a version that you can steam on your regular pan. If you can find gyoza skins ready made, I’m sure this would make the process a lot easier, but I haven’t personally seen any myself in rural Cavan where I live. Making from scratch was a little time consuming, but not difficult.
Whipped Ricotta with Roasted Vegetables
This would be the perfect accompaniment to any charcuterie board or a “picky dinner” with loads of small plates. Ricotta is a mild creamy Italian cheese that lends well to loads of flavour. By roasting the garlic and cherry tomatoes you get a lovely natural sweetness that goes perfectly with a drizzle of honey. We had this with some crusty ciabatta bread that was toasted, resembling crostini. This would also be lovely with some crudité vegetables.
Pudding Pastry Swirls
The are a lovely autumnal snack, with sticky tomato relish, crumbly black pudding and flaky pasty. What’s not to love? They look impressive and are super easy to make, thanks to pre-rolled puff pastry. If you don’t like black pudding, you can definitely sub in some white pudding or veggie pudding.
Parmesan Truffle Fries
If you haven’t tried truffle you haven’t lived. Since eating some for the first time in Toronto in 2016 and working in an Italian restaurant that served truffle pizza, I’ve been hooked. You don’t need to like mushrooms to like the flavour of truffle. Personally, I used to hate the texture of mushrooms but that’s why truffle is great as you can now get so many products infused with truffle such as butter, salt, oil etc. Decided to combine my favourite things, truffles, cheese & chips for this recipe. These are baked, not fried, so you can eat this dream flavour combo any day of the week!
Spiced Beef Empanadas
Hola! I’m back with another Spanish inspired recipe. Empanadas are essentially a filling of your choice wrapped in a pastry filling that is either baked or fried. The nicest ones I’ve tried have been filled with carne (beef), tuna and also the classic serrano ham & manchego cheese. I was trying to be healthy in my meal prep this week, to make room for all the delicious restaurant food I’ll be eating over the weekend, so I opted to make the baked variety. There are no rules with empanadas, as I have literally seen so many different varieties, just walking the streets of Málaga.
Loaded Fries
I wanted to try and recreate a recipe that would still be tasty and not completely blow healthy eating plans out the window. This was my concoction! Cheesy airfryer chips with melted cheese, bacon bits and spicy mayo.

Good quality sausages are essential to get a great homemade sausage roll, so support your local butchers and buy some great sausage varieties. These can be made with turkey, chicken, pork or even meat free sausages. Pre-made puff pastry makes these quick, easy and impressive to make, all in under 40 mins.
Spice Bag with Curry Sauce
Irelands favourite chinese takeout. This is by no means an authentic Chinese recipe, but I couldn’t have a Chinese fakeaway on my page without including the spicebag at some point. Salt & pepper chicken mixed with spicy chips. What’s not to like? Pour over some satay or curry sauce and you have a complete Irish spicebag experience for only 524 calories.

The Jambon is a staple in the Irish diet, made up of flaky puff pastry filled with bacon & cheese in a bechamel sauce. It’s the stuff of dreams after a night out, the perfect hangover remedy.
Buffalo Tenders with Blue Cheese Dip
Tangy and spicy tenders with blue cheese dip made with greek yoghurt is a match made in heaven. The chicken tenders being cooked in an airfyer means you have all the flavour and feel of fried chicken, without all the grease & calories. A win win. It’s the perfect weekend treat.
