These need little to no introduction. Look at that Nutella filled centre! This is a chocolate lovers dream. These cookies take a little time as you need to freeze the Nutella spoonfuls, but the end result is totally worth it. I love using dark chocolate as my chocolate chips as I find the Nutella centre with milk or white chocolate too sweet for my personal preference. But, you do you if you love sweet treats & milk chocolate. At 350 calories per cookie, while they are indulgent for sure, they are not as high as some other stuffed cookies recipes out there. I hope you enjoy!

Ingredients

Makes 14 cookies | 350 calories per cookie

  • 14 heaped tsp Nutella

  • 110g butter

  • 175g caster sugar

  • 1 tsp vanilla extract

  • 1 egg

  • 275g plain flour

  • 1/2 tsp bicarbonate of soda

  • 1 tbsp cornflour

  • 200g 70% dark chocolate chips

Method

  1. Line a baking tray with greaseproof paper and spoon 14 tsp of Nutella onto the tray. Freeze for 1 hour minimum.

  2. Once you are about to take the Nutella out of the freezer begin to make you dough. Preheat your oven to 170 degrees Celcius.

  3. Using an electric mixer, cream your butter & sugar until light. Add vanilla & egg. Be sure to scrape the sides down so it’s all an even consistency.

  4. Sift your flour with the cornflour & bicarb.

  5. Add the flour mixture to the batter.

  6. Lastly incorporate the chocolate chips.

  7. Split into 14 even sized balls. Flatten each ball and place a frozen Nutella blob into the centre of the dough and wrap the cookie dough around the Nutella, so that you have a ball shaped piece of cookie dough.

  8. Repeat for each cookie. Line 3 large baking trays and place no more than 5 cookies per tray, as they will expand when cooking.

  9. Bake for 11-13 minutes or until golden. Leave to cool on the baking trays for at least 20 minutes before eating so that they firm up and don’t break apart when you try to lift them off the trays.
