Cherry Galette
Calling all novice bakers, galettes are the pies for you. They are so easy and require minimal skill as you don’t need to do any fancy latticing, decorating etc, yet have a gorgeous rustic charm. The cherries I got were sour cherries so they had a lovely tang to them that complimented the sweetness from the sugar and vanilla. This would be gorgeous with a scoop of vanilla ice-cream served in the middle of the galette.
Cookie Dough Skillet
This is the perfect sharing dessert . Warm, gooey cookie dough filled with melted chocolate chips. This is indulgence at its best, super luscious and decadent. Best served warm with a scoop of salted caramel ice-cream.
Chocolate & Raspberry Baked Oats
This breakfast is like eating cake for breakfast, except healthy! I threw this together in less than 2 minutes, baked for 30 and the aroma around my kitchen was so good. I love the combination of chocolate and raspberry. I think this would also be delicious with white chocolate too. This is such an easy and tasty breakfast/brunch using ingredients everyone has in their cupboard.
Malteaser Biscuit Cake
I’m back with another super easy recipe that requires no mixer or weighing scales. This one also requires no baking either. This is a great kid-friendly recipe as they can get involved in the stirring, crushing, melting etc. Be warned, this recipe is not for the fainthearted. It’s super rich and luscious. A great traybake to bring to an event that is guaranteed to be scooped up in minutes. Just try to not eat the whole batch yourself!
Chocolate Flapjack Bites
Although being in an Airbnb in Spain for a month is great there are a few minor drawbacks in terms of my cooking capabilities. A home for short term rental is not going to be equipped with all the cooking utensils I’m used to such as a blender, scales, mixer, wok, decent knives etc. This is a recipe where no scales are needed, just a good old fashioned tablespoon. These chocolate flapjacks are quick, easy, delicious and are a lovely lunchbox treat or afternoon snack.
Lemon Drizzle Cake
My mams favourite cake, I had to include it on the website. Not going to lie, she makes a better one than me, but, here is my attempt at her lemon drizzle cake with a crunchy sugar top. The trick is to poke a few holes in the cake when it’s just out of the oven and let the topping seep into it. Lemony goodness. A classic that you can’t go wrong with.
Apple and Blackberry Pie
Autumn is coming so are the comforting winter recipes, my favourite part about winter. Apple pie is a classic dish that is always a firm favourite. I love adding rhubarb or berries into mine. This was my first attempt at latticing a pie crust, it’s surprisingly easier than it appears.
Nutella Stuffed Blondies
These are so fudgy, gooey & delicious with Nutella oozing out of the middle. The are a great traybake recipe that is super easy to make. You do need to be a nut lover however, as there is a lot of nutty flavours going on with the hazelnut chocolate spread and the almond butter. They are the perfect bitesize treat with tea!
Chocolate Oat Cookies
Here I am with another cookie recipe. Cookies are hands down by favourite thing to make (in case you hadn’t already noticed!). These cookies have a lovely chewier consistency from the oats and I love the combination of oats and chocolate.
Raspberry Crumble Bars
These bars are sweet, crumbly and delicious. You won’t be able to stop once you start. I kept seeing these bars pop up on my instagram feed again recently and so my addiction has been reignited. The vanilla in the berries makes them sweet and delicious, yet they are still tart. You can sub in any berries you like but personally I love raspberries or blueberries.
Kinder Bueno Twists
These are so ridiculously easy, I generally make these if I have a little bit of leftover puff pastry as you really only need about 1/2 of a sheet of the pre-made puff pastry. I saw these on TikTok but using Mars Bars and I decided I had to try them for myself. They are very sweet but the pastry adds a slight savoury dimension to the melted kinder.
Triple Chocolate Cookies
These chocolate chip cookies are super decadent and more-ish. This recipe makes 18 crunchy, yet soft in the centre, chocolatey cookies. These are a great tray bake recipe that you will want to make time and time again.
Lemon & Blueberry Muffins
These sweet zesty treats are the perfect accompaniment to a cup of tea. They are soft and fluffy inside and not dense or dry like you sometimes can get with the shop bought variety. The key for me is poking the holes in the muffins once out of the oven with a skewer and adding in a combination of fresh lemon juice and granulated sugar. This infuses the muffin with extra moisture and flavour!
Coconut Biscuit Bites
These delicious coconut treats are a cross between a cake and a biscuit. They are perfect with a cup of tea.
Salted Caramel Brownies
These decadent and rich brownies are sure to impress. They are so chocolatey and luscious for all the fellow chocoholics out there. The salted caramel adds a nice dimension of flavour but regular caramel would work perfectly fine too. Recipe remains the same just remove the salt.
Kinder Cookies
Nostalgia in a cookie. I used to love a Kinder Maxi bar in my lunchbox in school. I don’t care what anyone says, they are the best chocolate bars on the market. So why not mix the 2 best things in the world, cookie dough and kinder chocolate?
