Chocolate Flapjacks

Although being in an Airbnb in Spain for a month is great there are a few minor drawbacks in terms of my cooking capabilities. A home for short term rental is not going to be equipped with all the cooking utensils I’m used to such as a blender, scales, mixer, wok, decent knives etc. I am not planning on forking out for all this equipment when I am only here for such a short time, so I have to improvise with what I have, as obviously I cannot eat out every day for an entire month or I would have to be rolled home.

This is a recipe where no scales are needed, just a good old fashioned tablespoon. To be honest, the dish I was using was probably slightly too big for the amount of mixture I had so my flapjacks were thinner than I normally would make, but they were still delicious. These chocolate flapjacks are quick, easy and delicious. I like using dark chocolate as I love the richness of it, but feel free to use whatever chocolate you like. These are a lovely lunchbox treat or afternoon snack.

Ingredients (makes 16)

  • 12 tbsp rolled oats

  • 6 tbsp sugar

  • Roughly half of 100g bag of chocolate chips (50g)

  • A little under half of a 250g block of salted butter (roughly 110g)

  • 100g bar of dark chocolate

  • Any sort of oven proof dish (all my apartment had was a heart shaped tin, lol).

Method

  1. In a large bowl, mix together the oats, sugar and chocolate chips until combined.

  2. Preheat oven to 180 degrees Celcius.

  3. In a pan, melt the butter until bubbling, but not browning.

  4. Pour the hot butter into the dry mixture and stir until butter is coating all the oat mixture. You chocolate chips will likely melt, but that is ok as you will still have a lovely chocolatey base flavour.

  5. Grease the tin you are using with a little bit of solid butter.

  6. Using the back of a spoon (or your hands) press the flapjack mixture into your dish.

  7. Bake for 10-15minutes. Leave to cool in the tin as they will firm up upon cooling. They will just break apart if you cut them when they are hot.

  8. Once cooled, melt your chocolate in the microwave or oven a pot of boiling water (bain-marie). Pour the melted chocolate over your flapjacks and spread it evenly on top with the back of a spoon. Once chocolate is almost set (but not quite hard) slice into your desired pieces and take out of the tray/dish. Your first one may be harder to get out but once you have one out the rest should be easy. I sometimes find running a knife along the perimeter of the dish help loosen it.
