Nutella Stuffed Blondies
These are next level delish! I was looking for a great blondie recipe to post, and I remembered these lovely almond butter ones I used to make a few years back. Recently, I’ve been obsessed with stuffing chocolate, Nutella, peanut butter etc. into everything so I thought, what could be better than shoving mounds of Nutella to the inside of a blondie? They are very decadent and luscious, so a little goes a long way. I cut these into little bitesize pieces, and they are perfect with a cuppa.
Ingredients (makes 25 bitesize pieces)
1/2 cup butter softened (110g)
1/2 cup almond butter (110g)
3/4 cup ground almonds (75g)
1 tsp baking powder
10 tsp Nutella
2 eggs
1 tsp vanilla paste / extract
3/4 cup light brown sugar (150g)
Method
Preheat oven to 180 (Celcius fan oven) and line a 9 inch square dish with greaseproof paper.
Using a mixer (or in a large bowl by hand) beat together the butters until combined fully.
Add in the sugar, eggs and vanilla until runny batter is formed.
Add in the rest of your dry ingredients (everything except Nutella).
Spread half of the mixture into your lined dish.
Dollop the 10 tsp of Nutella on top and try to spread evenly as best you can using the back of the spoon/spatula. Try not to mix the Nutella into the batter too much, so be delicate when spreading.
Pour the remaining blondie batter on top and gently spread until Nutella layer is covered.
Bake for 25-30minutes. The top of the bake should be a deep golden brown.
Leave for at least an hour before trying to slice as the mixture is still quite wet inside so you want it to set slightly.
