Chocolate Oat Cookies

Here I am with another cookie recipe. Cookies are hands down by favourite thing to make (in case you hadn’t already noticed!). These cookies have a lovely chewier consistency from the oats and I love the combination of oats and chocolate. Another great variety of these cookies is adding cinnamon and some raisins instead of chocolate, which no doubt will be a recipe I’ll be posting soon.

Ingredients (makes 15)

– 150g Butter, softened
– 100g Granulated Sugar
– 80g Light Brown Sugar
– 1 Large Egg, beaten
– 1 tsp Vanilla paste (or extract)
– 125g Rolled Oats
– 225g Self Raising Flour
– 1/4 tsp Baking Powder
– 200g Milk Chocolate (I use Cadbury Dairy-milk chopped up)

Method

1) Preheat your oven to 180C Fan and line baking trays with greaseproof paper paper (I usually line 3 large trays)

2) Cream the butter and sugars until light and fluffy and thoroughly combined in a mixer

3) Gradually add in the egg and vanilla and continue to beat until all ingredients are well combined

4) Add the oats, flour and baking powder and mix until a thick dough is formed.

5) Add the Chocolate Chips/chunks to the mix and beat again until evenly spread throughout.

6) Using a heaped tablespoon amount, roll each ball in your hand till a smooth ball is formed. Place them on the lined trays (I did 6 per tray so they definitely didn’t touch) and squish them slightly with the back of the spoon, to slightly flatten them (they still should be fairly thick)

7) Bake the cookies in the oven for 10-12 minutes (depending on how soft or crunchy you like them. Howeverm under 10 mins and they won’t be cooked through) – Once baked, remove from the oven and allow to cool on a wire rack.
