Calling all novice bakers, galettes are the pies for you. They are so easy and require minimal skill as you don’t need to do any fancy latticing, decorating etc, yet have a gorgeous rustic charm. I saw some frozen cherries in the supermarket and picked them even though I had no clue what to do with them. I saw someone on my instagram feed making an apple galette so I thought I would try out a cherry galette. The cherries I got were sour cherries so they had a lovely tang to them that complimented the sweetness from the sugar and vanilla. This would be gorgeous with a scoop of vanilla ice-cream served in the middle of the galette.

Ingredients

Serves 6-8 slices | 181 calories per serving (8 servings)

  • Pre-rolled short crust pastry

  • 100g vanilla sugar (or caster sugar & 1 tsp vanilla extract/paste)

  • 1/3 tsp salt

  • 3 tsp cornflour

  • 600g frozen cherries

  • 1 beaten egg

  • 1 tbsp light brown sugar

  • Little or butter/oil for greasing the dish

Method

  1. Preheat oven to 180 Celcius.

  2. In a large bowl mix the cherries with the vanilla sugar, salt & cornflour. Grease an 8 inch pie dish with a little oil or butter

  3. Slightly roll the pre-rolled pastry so that it hangs around the side of the dish.

  4. Add your cherry mix to the dish. Fold the overhanging crust over the top of the cherries. It doesn’t need to be perfect or even, that’s part of the charm of the dish.

  5. Brush the visible pastry with some beaten egg and sprinkle over a tbsp of light brown sugar.
