Gingernut biscuit

Gingernut biscuits are a staple in our house. My mam loves them as they are not too sweet and have a nice spice to them. They are really nice and crunchy and go perfect with a cup of tea of coffee. I made big biscuits out of this amount of dough, but you could definitely make them smaller if you prefer a thinner biscuit. Ginger is definitely a festive flavour and I’m so happy to finally be starting to make my Christmas recipes of the season.

Ingredients

Makes 12 biscuits | 166 calories per biscuit

  • 200g plain flour

  • 1 tsp bicarbonate of soda

  • 4 tsp ground ginger

  • 1 tsp mixed spice (optional)

  • 80g caster sugar

  • 100g melted butter

  • 4tbsp golden syrup

  • 80g white chocolate chips (optional)

Method

  1. Preheat oven to 180 degrees Celcius and line a large baking tray with greaseproof paper.

  2. Weigh all dry ingredients into a large bowl and stir together.

  3. Melt butter and golden syrup on a low heat and when melted pour into dry ingredients and stir together until loose dough is formed.

  4. Using a tablespoon scoop mixture and roll in your hand until ball is formed. Repeat until all dough it used up.

  5. Press on the balls slightly with your hand to flatten them a little and bake for 12 minutes.

  6. Allow to cool in the oven with the door open so that they get nice and crunchy.
