Triple Chocolate Cookies
Calling all chocoholics, this recipe is for you. I make 18 cookies out of this amount. I generally prefer bigger softer NYC style cookies, but I thought I would mix it up for this recipe. You can obviously make these cookies larger and increase the cooking time by a minute or 2 to get that NYC cookie style, if you rather, but with a triple chocolate cookie sometimes I find that the larger cookies can be too much sweetness and I can never finish them.
You can play around with this recipe and substitute in more milk chocolate if you don’t like white. I just like the way the white chocolate chunks look against the dark cookie batter but you can totally use chunks of milk chocolate, if you prefer that! I hope you enjoy making these cookies as much as I do.
Ingredients
125g butter (softened)
100g caster sugar
100g dark brown sugar
1 egg
1 tsp vanilla extract
225g self raising flour
¼ tsp baking powder
25g cocoa powder
200g white chocolate (I prefer using a bar and chopping into large chunks rather than chocolate chips)
100g milk chocolate chips (I use chocolate chips for this as too many large chunks can make it hard to get cookies into ball shapes)
Method
Beat butter & sugar in large bowl until well combined.
Preheat the oven to 180 degrees & line 3 large baking trays with baking paper.
Add in the egg & vanilla until incorporated.
Add in dry ingredients slowly (except for chocolate chips).
Chop white chocolate into chunks and add into batter with the milk or dark chocolate chips that you are using.
Spoon the mixture using a tablespoon into 18 balls of roughly even size.
Place 6 balls on each tray with good space between each ball (about 2 inches) (my trays fit 6 onto each tray). No need to flatten the balls as the heat of the oven does this.
If you want to freeze your cookie dough now is the time to do it. Place in zip-locked bags and bake as you wish if you don’t want to cook all 18 at once.
Bake for 11-13 mins.
Don’t eat straight away as cookies will be too soft. Transfer to a wire rack about 15 mins after coming out of the oven to fully cool.
