Coconut Biscuit Bites
I was not really sure what to call these as they are kind of a hybrid between a cake and a biscuit. If you like Polo biscuits you will love these as they are a lovely nutty coconut flavour and a crumbly texture but also have a slight cake like consistency. I like chunks of chocolate when Iām baking and find chopping up a bar of chocolate to be better than using chocolate chips. But you can always use chocolate chips, if you rather! I made 18 biscuits out of this but you can make more or less if you wish, you may just need to alter the baking times slightly.
Ingredients (makes 18 cookies)
125g butter cold & cubed
225g self raising flour
1/4 tsp baking powder
125g golden caster sugar
125g desiccated coconut
2 eggs beaten
1 tsp vanilla bean paste (or 1 tsp vanilla extract)
100g dark chocolate chunks (or chocolate chips)
100g milk chocolate broken into chunks (or chocolate chips)
25g extra milk chocolate for drizzling on top (optional)
Method
Weigh the flour & baking powder into a mixing bowl
Preheat the oven to 200 Celcius
Add the cold cubed butter to the flour and make into breadcrumb consistency with your fingertips
Add the desiccated coconut & sugar to the butter/flour mix until all combined
Using my mixer I then add in the beaten eggs & vanilla paste
While that is all mixing on a slow speed I chopped up my chocolate into chunks (about half of Dairymilk square size chunks)
Once a dough is formed I add the chocolate chips and mix until evenly distributed
I lined 3 baking trays with greaseproof paper and using a tablespoon amount of dough mix I rolled them into balls and placed on the trays
Before putting in the oven I flattened each ball slightly with the back of a spoon
I baked in the oven for about 12-15 minutes or until golden brown
Once the biscuits are out of the oven I placed on a wire rack to cool and drizzled some melted milk chocolate on top (melted in the microwave on a low setting for about a minute)
