Jam Tarts

These are the cutest little desserts that are SO easy to make, anyone can whip them up. Only 4 ingredients and take less than 30 minutes. Any flavour jam or curd will do. These are the perfect summer snack, and relatively low in calories.

Ingredients

Makes 16 | 83 calories per tart

  • 170g self raising flour

  • 75g butter (chilled)

  • 20tsp jam of choice

  • 2 tbsp caster sugar

  • 3-4tbsp water

Method

  1. Preheat the oven to 180 fan (200 regular oven). Grease a cupcake tin with some butter

  2. Cube the butter and rub with fingertips into the flour until breadcrumb consistency formed.

  3. Add your sugar and stir together followed by a little water. Add a tbsp at a time until the dough comes together but isn’t wet.

  4. Roll it out on a floured surface and using the rim of a wine glass or a cutter, cut into 16 circles.

  5. Place these pastry circles into the cupcake tin in each slot.

  6. Add a tsp of your jam into each pastry lined slot.

  7. Bake for 20-24mins or until edges are all golden.

  8. Remove from the tin and allow to cool on a wire tray.
