These are deceptively unhealthy but regardless I love an oaty buttery flapjack. These have a blend of coconut, almond and walnut with an optional drizzle of dark chocolate on top. These are just sheer perfection with a cup of tea. Top tip: allow to cool these completely before trying to slice (unlike me who did not have the patience and ended up with a few crumbly disasters). The butter and golden syrup firm up as they cool so you will get better looking slices if you leave them overnight or for a few hours before eating. I knew better than to make this mistake but I really wanted to taste them lol. I hope you enjoy!

Ingredients

Serves 16 | 362 calories per serving

  • 340g butter

  • 2 tablespoons golden syrup

  • 170g light brown sugar

  • 1 tsp vanilla extract

  • 370g oats

  • 30g desiccated coconut

  • 30g ground almond

  • 30g chopped walnuts

  • 85g plain flour

  • 50g chocolate chips (melted)(optional)

Method

  1. Preheat oven to 160 Celcius.

  2. Melt the butter with golden syrup, vanilla & sugar until all melted and combined.

  3. Weigh out all other ingredients (except for chocolate chips) into a large bowl.

  4. Line a 8 inch dish with greaseproof paper.

  5. Add the melted mixture to the dry ingredients and stir until all the dry mix is evenly coated.

  6. Pour into the lined dish and bake until firm and golden for 25-35 minutes. Allow to cool completely before attempting to slice or the flapjacks will crumble.

  7. If using the chocolate, while your mixture is cooling, drizzle over the chocolate and allow to set with the cooling flapjacks before slicing.
