French Toast

I’m usually more of a savoury brunch gal, but sometimes I just crave something nice and sweet on the weekends. My go-to is French Toast as we always have some bread in the house and frozen berries in the freezer. Sometimes I’ll make this savoury by leaving out the berries & yoghurt and serving this with crispy bacon instead. A lovely weekend treat and super easy to make!


Ingredients (serves 2)

  • 4 slices of wholegrain bread (I use the multi-seed cob from Lidl)

  • 2 eggs, beaten

  • 1/2 tsp sugar (I use vanilla sugar, but this is not essential)

  • 1/2 tsp vanilla paste (or extract)

  • 1/2 tsp cinnamon

  • 100ml low fat milk (plant based milk tastes great too, adds a nutty flavour)

  • handful of fresh / frozen berries (I like raspberry & blueberry)

  • 2 tsp maple syrup (or honey)

  • 1 tbsp greek yoghurt

  • 1 tbsp butter

  • 1/2 tsp sea salt


Method

  1. Slice your bread.

  2. Mix together your eggs, milk, salt, vanilla, sugar & cinnamon until combined.

  3. Melt your butter on a large non stick pan.

  4. Soak your bread in the egg mix and cover both sides.

  5. Place on the hot pan and cook for 3-4 minutes each side, or until golden and firm (The bread should not be soggy).

  6. Plate up and serve immediately with desired toppings. I used defrosted berries, a dollop of greek yoghurt and a tsp of maple syrup on mine.
