Herby Lemon Pasta

Don’t be fooled by the apparent lack of sauce with this pasta dish. This meal is packed with flavour and punch from the lemon zest & juice. It is the perfect meal for coming in to the warmer weather (finally!). It would be the perfect meal with some garlic bread and a summer salad. I used gigli as my pasta noodle of choice, but you can use whatever noodle/pasta you wish.

Ingredients

Serves 4 | 474 calories per serving

  • Juice of a lemon

  • Zest of a lemon

  • 1/4 red onion (thinly sliced)

  • 1 tsp chilli flakes

  • 4 cloves garlic (minced)

  • chopped basil & parsley (handful of each chopped fine)

  • handful parmesan cheese (grated)

  • 2 tbsp butter

  • 400g dried pasta

Method

  1. Heat heavily salted pot of water on the hob with a tbsp oil until boiling. When boiling add pasta and cook according to packet instructions.

  2. Melt butter on a pan. When foaming add all the ingredients (except cheese & lemon juice).

  3. Stir together on a low heat for 5 mins.

  4. After 5 mins add a ladle full of the starchy pasta water & the lemon juice to the pan with all the herbs. Stir together.

  5. When pasta is cooked, strain and add the herby lemon sauce to the pot. Stir together and top with the parmesan cheese and a few extra herbs or chilli (optional).
