Chilli Beef Stir-fry

Spice lovers this ones for you. This stirfry is fresh & flavourful packed with crispy steak pieces. I was playing around with steak that I pulled out of the freezer and decided to try make a healthier version of a crispy beef that you would get in a Chinese takeaway, without deep frying. This recipe only calls for 3 tbsp of oil for the whole dinner. We served this with a head of steamed broccoli & some basmati rice with peas through it.

Ingredients

Serves 5 | 315 calories per serving (excluding rice)*

  • 2 sirloin steaks (excess fat removed), thinly sliced

  • 1 egg

  • 3 tbsp cornflour

  • Salt

  • Pepper

  • 3 tbsp groundnut oil

  • 1 onion, halved and sliced

  • 1 red pepper, quartered and sliced

  • 1 red chilli, deseeded & sliced

  • 3 cloves garlic

  • 1 tsp ginger paste (or fresh ginger peeled & grated)

  • 3 tbsp hoisin sauce

  • 4 tbsp dark soy sauce

  • 2 tbsp rice wine vinegar

  • 4 tbsp brown sugar

  • 2 tbsp honey

  • Juice half lime

  • 2 tsp chilli flakes (optional if you want it spicy)

  • 2 spring onion, (optional for garnish)

  • handful chopped coriander (optional, for garnish)

Method

  1. Thinly slice your steak and place in a bowl with cornflour, egg, salt & pepper. mix together with your hands so that steak is evenly coated (the mixture will be very wet & sticky). Set aside

  2. In a large skillet (or a wok), heat the oil. When hot place the pieces of seasoned steak spaced out all around the pan (you may have to do more than 1 batch). If you overcrowd the pan, the steak won’t get crispy. Cook on one side for about 4-5 minutes, then turn and repeat on the other side.

  3. While your steak cooks prepare your sauce by mixing the garlic, ginger, vinegar, hoisin, soy, brown sugar, lime juice, honey, salt, pepper & chilli flakes.

  4. Once steak is cooked, set aside onto kitchen paper to remove the excess oil. Repeat until all the steak is cooked.

  5. Using no extra oil (unless your pan is very dry) begin to sauté your onion, chilli & pepper. Try to scrape any of the steak pieces that may have stuck to the bottom of the pan as they have loads of flavour. Cook for 4-5 minutes until onions are soft.

  6. Add your sauce and stir together for a minute or 2 to cook the garlic before adding back in your steak pieces.

  7. Ensure all your steak is heated through and evenly coated before serving. Sprinkle with coriander & spring onion. Best served with some steamed broccoli and basmati rice (or cooked egg noodles).
